Ingredients:

Cabbage:

Lg head of cabbage
4-6 strips bacon
1/2 small onion diced
1 tsp minced garlic (1 tsp garlic paste or one fresh clove)
1 tsp chicken boullion
Salt
Pepper
Catfish:
4 catfish filets (lightly salted)
1 cup cornmeal
1/4 cup plain flour
1 tbs salt
1 tbs baking powder
1/2 tbs paprika
1/2 tbs cayenne pepper
1/2 tbs garlic powder
1 tsp black pepper
3 eggs
peanut oil for frying
Oxtails:

2.5 - 3 lbs oxtails
1 lemon/lime (for cleaning)
1 envelope onion soup mix
1.5 tsp meat tenderizer (or kosher salt)
1/2 tsp black pepper
2 tsp granulated chicken boullion
1 tsp garlic paste
3 tbs plain flour
1.5 tsp browning (optional)
3 cups water
oil for frying

*You may need more or less cooking time. this depends on the age of your meat. (I went 8.5 hours with the slow cooker on low)
*I bought the oxtails from a local Jamaican food market
*this is my mom's oxtail recipe/technique
Rice pilaf:

10oz Vigo Yellow rice (follow instructions)
2 tbs butter
3 tbs red bell pepper
2 tbs diced onion
