Healthy Parsley Soup 🥣🌿✨

Ingredients
For the soup
• 2 carrots, chopped
• 1 onion, chopped
• 1 bunch fresh parsley, chopped
• 1 clove garlic, minced
• 2 potatoes, diced
• 1 small head broccoli, chopped
• Olive oil, for cooking
• 1 tbsp butter
• Mixed herbs (thyme, oregano, or your choice)
• Salt & black pepper, to taste
• Water

Other ingredients
• Croutons
• Ricotta cheese
• Olive oil, for drizzling
• Chili flakes

Instructions
Soup Base
In a large soup kettle, heat olive oil and butter over medium heat. Add the carrots, onion, parsley, and garlic. Stir and cook for a few minutes until fragrant. Add the potatoes and broccoli, then pour in enough water to cover the vegetables. Season with herbs, salt, and pepper. Let it simmer until all the vegetables are soft.

Blending
Once everything is tender, blend the soup mixture until smooth and creamy.

To Serve
Ladle the soup into bowls, top with a handful of croutons, a dollop of ricotta, a drizzle of olive oil, and a sprinkle of chili flakes. Serve warm and enjoy!
