Karniyarik with Pilav & Chicken Thighs
Ingredients
For the pilav
• 250 g long-grain rice (washed)
• 2 tbsp vermicelli
• 1 tbsp butter
• 1 tbsp olive oil
• ½ tsp salt
• A squeeze of lemon juice
• 500 ml hot chicken or beef stock (or water)
For the karniyarik (stuffed aubergine)
• 3–4 medium aubergines, peeled and halved lengthwise
• 250 g minced meat
• 1 onion, finely chopped
• 2 spring onions, finely sliced
• 1 small bunch flat-leaf parsley, chopped
• 3–4 peeled tomatoes (fresh or canned)
• 1 red pepper
• Butter or oil, for frying
• Salt and pepper, to taste
• Tomato sauce or passata, for baking
For the chicken thighs
• 4 chicken thighs
• 1 tbsp butter
• Salt, pepper, and spices of choice (e.g., paprika, thyme, chili)
Instructions
Pilav
In a pot, melt butter and olive oil. Add the vermicelli and sauté until golden. Stir in the washed rice and cook for a few minutes, allowing it to absorb the oil. Season with salt and a squeeze of lemon juice. Add hot stock to cover the rice. Once it starts to simmer, cover it with a lid and reduce the heat to low. Cook until the liquid is fully absorbed. Let rest for 5 minutes, then fluff with a spoon.
Karniyarik
Peel and halve the aubergines. Score the insides in a zigzag pattern and fry in hot oil until soft and golden. Set aside. In a pan, melt butter and sauté the onion until translucent. Add the minced meat and cook through. Stir in parsley, spring onions, and crushed peeled tomatoes. Season well and let it simmer. Fry the red pepper and set aside. Place the fried aubergines in an oven dish. Gently press down the centers to create space for filling. Spoon the meat mixture into each half. Top with tomato slices and strips of fried pepper. Pour a bit of tomato sauce into the dish and bake at 180°C until bubbling.
Chicken thighs
Sear the chicken thighs in butter until golden and fully cooked. Season with your favorite spices. Let rest before serving.
✨ Serve everything together — the fluffy rice, juicy aubergines, and tender chicken.
