Ingredients:
* 1 green plantain
* 1 yellow plantain
* 1 cup Cassava ( You can buy the frozen ones)
#1 Boil the Cassava
#2 Prepare the pork: boil the pork after you marinated for 30 minutes or more with garlic, adobo, oregano, and vinegar. Keep the meat broth for the Trifongo. Brown the meat and add onions
* 1 Lb Pork shoulder cut in pieces 1.5"
* 1 tablespoon adobo
* 1 teaspoon garlic salt
* 1 teaspoon oregano
* 1/3 cup vinegar
* half onion
#3 Sautéd: olive oil, chopped onion, 2-3 smashed garlic, add a pinch of salt.
#4 Peel the plantains and cut in pieces then fry both sides until is cook but not overcook. Do the same with the Cassava pieces you boiled.
# Make the Trifongo - use a mortar or a pilón. Add pieces of plantain, Cassava, the sautéed onión with garlic and cilantro, and 1-2 tablespoons of the pork broth. Add a pinch of salt as needed.
