HYDERABADI MUTTON BIRYANI @flavorfulpalate-wk

Hello everyone, welcome to my channel. This dish is from the Hyderabadi cuisine, the most authentic Nawabi Biryani that tastes so good and is so popular in India specially in Hyderabad. When it is put on stove or in the oven to be cooked it is not opened in between to check, that is why it is also called The Traditional Dum Biryani. "Dum" which means cooking in steam. The Biryani pot is closed airtight and so it cooks in its steam. It's made with spices, yogurt, and lots of love. Biryani is a winner in any party menu. Ingredients:
2.2 lbs. Meat (I took goat meat, you can use any meat you like)
4 cups Rice
2 Tbsps. Salt OR to taste (for marination)
3 tsp Salt (Add in Rice water)
1 Tbsp. Ginger paste
1 Tbsp. Garlic paste
1/4 cup Butter or ghee (to add on top of cooked rice)
1/2 cup Oil
1/3 tsp Saffron
1/3 cup warm water (to add in saffron)
1/4 tsp turmeric powder
1 tsp Garam Masala powder
1 tsp Cardamom powder
20 Green chilies (make it's paste)
1 & 1/2 cups yogurt (measured with a liquid measuring cup)
1/2 + 1/4 cups (fried onions)
1/3 cup Cilantro
1/4 cup Mint leaves
1/2 Lemon (freshly squeezed)
Lots of water for the rice to cook

Method
1. Fry onions and keep it aside. Tip: Put fried onions in Ziplock bag and keep it in the freezer for extra crisp.
2. Marination - Wash meat and put it in the baking dish. Add 5 tsp salt, ginger garlic paste, turmeric powder, garam masala powder, cardamom powder, green chilies paste, chopped cilantro, chopped mint leaves, yogurt, add some of the fried onions and keep some aside to put on top of rice. oil (add same oil in which you fried onions). Mix and marinate for few hours or overnight.
3. Wash rice & keep it aside. In 1/3 cup of water add saffron strands and warm the water and keep it aside to put on top of rice.
4. In a big pot add water. Add in it 2 tsp salt, cinnamon stick, & shah zeera. Put the pot on a stove on high heat. When water starts to boil add rice. Cook for 4-5 minutes and drain the rice. Put the drained rice on top of marinated meat, add fried onions, lemon juice, butter or ghee, saffron strands with its water, and some more chopped cilantro. Cover with foil and BAKE at 400°F for 30 minutes then lower oven temperature to 350°F & continue baking for another 40 minutes. Now switch off oven. Take out the Biryani pan. Ready to eat. Serve with yogurt chutney. Enjoy!
