Paneer or Indian cottage cheese is a fresh cheese common in the Indian subcontinent. It is a non-aged, non-melting soft cheese made by curdling milk with a fruit- or vegetable-derived acid, such as lemon juice. Its acid-set form (cheese curd) before pressing is called chena.

In this video, we will make a recipe of Paneer, which is very easy to make. This Homemade Soft and Spongy Cottage Cheese is extremely delicious and much better than packaged one.

To make paneer or chena, milk is boiled and then curdled with a acidic ingredient. The curdled milk solids are then drained to a muslin or cheese cloth. Later it is pressed with a heavy object to set and then it is cubed to pieces.
Note: I have used milk powder in this recipe to get more firm and high quality paneer, but it's completely optional if you are using full fat whole milk.
