INGREDIENTS:
2 tbsp Olive oil (divided)
3 garlic cloves, minced (about 3 tsps)
1/2 pound / 225g medium shrimp, peeled and deveined
Season with Salt and Black pepper
1/2 yellow onion
1-2 large beefsteak tomatoes
1 green bell pepper
2 tbsp tomato paste
1/2 tsp harissa paste
1/2 tsp ras el hanout (optional)
1/4 tsp ground coriander
1/2 cup / 120ml warm water
4 large eggs
Baguette, for serving (can be toasted if you like)
