Coriander Flavoured Cowpea Sundal Dasara Special #shorts
Coriander Flavoured Cowpea Sundal is a quick, easy and flavourful savoury recipe prepared using Cowpeas, seasoning, fresh grated coconut, combined with the flavour of coriander leaves. This healthy, evening snack is packed with nutrients and is also perfect for festive occasions.
* Approx. preparation and cooking time: 10 mins
* Cowpea soaking time: Minimum 4 hours/overnight (after soaking cowpeas can also be sprouted to make it more healthy)
* Serves 3-4 persons
* List of ingredients:
1. Cooked and mildly salted red cowpeas (sprouted) - 1 and half cups
2. Fresh grated coconut - 1/4th cup
3. Fresh coriander leaves - 1 handful
4. Urad dal - 1 teaspoon
5. Mustard seeds - 1 teaspoon
6. Red chilli pieces - 4
7. Curry leaves - 1 sprig
8. Lemon - Half
9. Salt - Half teaspoon
10. Coconut oil (or any other oil of your choice) - 1 tablespoon
* Method of preparation:
1. To begin with, into the mixer jar add 1/4th cup fresh grated coconut, a handful of coriander leaves and grind to a coarse paste, without adding any water. Once done, keep this aside for later.
2. Into a small wok/pan, add 1 tablespoon coconut oil and turn on the heat to low-medium flame. Then, add 1 teaspoon each urad dal, mustard seeds, fry until the seeds start to splutter and turn aromatic.
3. Next, add 4 red chilli pieces, a sprig of curry leaves and continue frying. Now, add 1 and half cups cooked and mildly salted red cowpeas, previously ground paste, half teaspoon salt (can vary as per taste and quantity) and toss all the ingredients.
4. Finally, squeeze in some lemon juice and enjoy flavourful Coriander Flavoured Cowpea Sundal with a hot cup of coffee/tea.
