Ring muduki Behampur special snacks…it is also called as tana khadu or segdalu. Tana means crisp…generally khadu or Segdalu is soft but ring muduki is crisp and light in texture. The process and ingredients also same but the proportion of ingredients different.
It looks like a ring so it is called as ring muduki. You can make small or big in size according to your preference. Here I share all tips n tricks for perfect ring muduki. So lets get started
Preparation Time 10 min
Cooking Time 15 min
Serving Pesrons 4 to 6
Ingredients
1 cup riceflour
1 cup water
2 tbsp moong dal
3 to 4 green chili chopped
10-12 curry leaves chopped
1 tbsp chopped coriander leaves
1 tbsp sesame seeds
1 tsp carom seeds
½ tsp cumin seeds
½ tsp blackpepper powder
½ tsp turmeric powder
1 tsp red chili powder
2 tsp oil
Salt to taste
OIL to deep fry

Procedure
Boil water and add all ingredients except oil n rice flour.
Let it boil for some time n add oil.
Now add riceflour little by little and stir it continuously to avoid lumps.
Stir it for some time n cover it…let it cook with the steam for some time.
Now remove the dough to a plate and cover it, so that it will not dry.
After cooling down, knead the dough to make it soft n smooth.
Now rest the dough for some time.
Take a portion of the dough and again knead it.
Roll it with both hands and then roll it thin on the flour.
Cut into portions and fix it as a ring shape.
In this way make all the rings.
Meanwhile heat oil for deep frying.
In high flame drop the ring muduki into hot oil.
After some time, reduce the flame to medium and fry.
It will be light after osme time and floats in oil.
Flip it and deep fry till golden colour n crisp.
Enjoy this ring muduki with masala chai…
Notes
while making ring muduki, if it breaks…knead the dough with some water n lukewarm water and make the dough soft n smooth.
Don’t deep fry muduki in low flame, it will be hard.
The ring muduki may be small or big in shape according to your preference.
