It won't take the luck of the Irish to absolutely nail these PERFECT Black Pepper Cast Iron Potatoes—the PERFECT side dish for any of your St. Patrick's Day festivities! With a nice brown crust and plenty of flavor, these potatoes will be a quick go-to for any number of meals...and all in less than 20 minutes! Recipe below!

BLACK PEPPER CAST IRON POTATOES
Ingredients:
11 small potatoes, halved
2 tbsp of oil, divided
1/2 tsp granulated garlic
1/2 tsp salt
1 tsp fresh cracked black pepper (to taste)
Instructions:
Preheat your oven to 400ºF/200ºC.
Heat your pan over medium-high heat.
Add the halved potatoes to a large mixing bowl along with about 1 tsp of the oil and the seasonings. Toss the potatoes in the bowl to evenly coat them with the oil and seasonings.
Add the remaining oil (about 1.5 tbsp or so) to the hot pan and swirl it around to coat the surface. Add the potatoes and turn them so they are flat side down. Let the potatoes sear for about 5-6 minutes, until they are golden brown on the flat side, then remove from heat and turn them so that the flat side is now facing up.
Pop the entire cast iron pan into your preheated oven (or transfer to an oven safe baking sheet/dish) for about 10-12 minutes.
Remove and serve!
