I am going to make a classic Black Forest cake today. It combines the sweetness and sourness of cherry puree, the mellowness of cream and the bitterness of dark chocolate. This cake is absolutely mouth-watering.
🍞INGREDIENTS
☘️6-inch Chocolate Sponge cake
3 Large eggs at room temperature (60-65g with shell)
Caster sugar 60g
Cake flour 60g
Milk 45g
Unsalted butter 30g
Cocoa powder 10g
☘️Cherry Puree
Cherry in syrup 150g
Cherry syrup 120g
Corn flour 15g
Caster sugar 10g
☘️Frosting
Thickened cream 400g
Icing sugar 32g
☘️Chocolate garnish
70% cocoa Dark chocolate 150g
8 fresh cherries
Cherry syrup 25g (brush cake)
☘️** Preheat oven to 150C/300F
** Bake at 150C/300F for 40 mins, then turn to 160C/320F for 5 mins
