American Irish Coddle
In Ireland, the classic Dublin coddle is a simple stew of boiled sausages, bacon, potatoes, and onions. You don't fry or otherwise prepare the meat, just simply boil it until it's done. Now, this certainly is tasty, but this is New England rather than Ireland. We have a strong Irish heritage here in the Boston area, but when we prepare a sausage dish we do it a little different.
