Hi, everyone, welcome to Souped Up Recipes. Today I will share a gluten-free dumpling recipe. It is one of my favorite Dim sum dishes - Chiuchow Fen Guo (Chao Zhou Fen Guo潮州粉果). It has beautiful transparent skin, and a flavorful, healthy filling. You are gonna love it.

INGREDIENTS FOR THE FILLING
- 2 tbsp of cooking oil
- 1/4 cup of diced shallot
- 2 tbsp of minced garlic
- 1.5 tsp of minced ginger

- 1/3 cup of diced compressed tofu bean curd (Dou Fu Gan豆腐干)
- 3 tbsp baby shrimp or sun-dried shrimp (干虾仁或者虾皮)

- 1/2 cup of diced Jicama (Sha Ge 沙葛)
- 10 ounces of ground pork
- 2 tsp of light soy sauce (Amazon Link - https://amzn.to/3dqTagw)

- 1 tbsp of oyster sauce (Amazon Link - https://amzn.to/2Y7T6y9)

- 1 tsp of sugar
- 1/3 cup of diced celery
- 1.5 cup of diced garlic chives
- 1.5 tbsp of sesame oil (Amazon Link - https://amzn.to/3d37uvx)
- 1/2 cup of the mushroom soaking liquid
- 2 tbsp of cornstarch
INGREDIENTS FOR THE WRAPPER
- 100 grams of wheat starch (Amazon Link - https://amzn.to/2UKdnaD)
- 100 grams of tapioca starch (Amazon Link - https://amzn.to/3d286Sp)
- 25 grams of cornstarch (Amazon Link - https://amzn.to/3fySl7b)
- 2 tsp of vegetable oil to add to the water
- 300 grams of water
- 1 tbsp of oil to oil the rack and oil the rolling pin
- Extra cornstarch to prevent the dough from sticking
