Wander some of the side streets to find family owned and operated restaurants serving delicious home-style Khmer food starting at only $1.50 a dish. Most places serve draught beer for $.50/glass and smoothies and fresh juices are usually $1. I found many places just wondering, others through checking out local blogs. I found Chive Cakes by Aunty Moa just by walking down Sivutha Blvd. My Little Cafe I found online, mylittlecafeangkor.com. There are some wonderful restaurants in beautiful settings like Cafe Indochine Restaurant and FCC for those who want to be away from the buzz of Pub Street as well as most streets on the eastside of the Siem Reap River and the Kandal Village between the Old Market area and the Old French Quarter. I find Siem Reap one of the best places for dining in Cambodia for it's sheer number of restaurants/cafes all within a short walking distance from the center of town.

Lots of cool bars around Pub Street and it's network of alleys. Don't leave your drinks alone and book a tuk-tuk ahead of time or by using Grab.
