Palestinian Mana'eesh - TWO WAYS | Sahtein! مناقيش‎

Hi and welcome back to my kitchen! شكراً على انتظاركم

If you're Arab you'll know Mana'eesh (or manakish, or manoushe)- an iconic snack of fresh flatbread spread with Zaatar and Olive oil. One bite and you'll be hooked- it's great for breakfast, with lunch, or at 3am - or make it a complete meal with labneh, fresh tomatoes and cucumbers, fresh mint tea... Maybe some grilled halloumi...

So if you haven't made it by yourself before, I mean from scratch, take this as a sign- now's the time to give it a go! It's simple, and once you practice, making dough only gets easier- and it's so rewarding. I'm showing you two ways to cook it at once- on a stove or in the oven.

Ingredients list is below, and if you have any questions don't hesitate to ask!

Dough: enough to make ~12 10cm round mana'eesh
(or make some spinach turnovers, or make them into lil pizzas too, great for snacks on the go!)
2.5 cups bread/strong flour
1 cup unbleached all purpose flour
1 tablespoon salt
1.5 tablespoons sugar
1 tablespoon dry milk powder or liquid milk (if you use a liquid milk, you'll use less water. You can also omit this ingredient, but it does add a nice texture/taste. Use a non-dairy option and make it vegan!)
1/3 cup sunflower/other vegetable oil (please, not canola oil)
~1 1/3 cups water
1 tablespoon (roughly) active dry yeast

Lots of olive oil. Lots of Zaatar. that's it!
