Chicken Matzo Ball Soup aka Jewish Penicillin - Passover

This hearty and conforting tradtional soup will add to any holiday celebration or help make anyone not feeling well feel a little bit better! At least all the Bubbes say so! This recipe starts totally from scratch.

Chicken Matzo Ball Soup

For the Stock/broth---

1 whole chicken
2 pinches Kosher salt
1 C diced onion
2 C diced carrot
2 tsp dill
2 tsp thyme
3 tsp parsley

Fill crock pot or dutch oven wioth water, enough to cover the entire chicken. Cover. Slow roast or bake until chicken falls off the bone.
Debone chicken, set aside.

Matzo Balls---

4 eggs, lightly beaten
1/4 C smaltz (chicken fat) or oil
1/4 C chicken broth
1 C matzo meal
1 tbs ground ginger
1 tsp cinnamon
1 tbs celery flakes

Mix together well.
Chill for about 20 minutes or until stiff.
Drop in uniform balls into 6 C stock/chicken broth/water.
Simmer for roughly 30-40 minutes for fluffier balls.

When they are done, return the deboned chicken and veggies to the matzo balls and broth.

Serve

and enjoy!
