Baguio Oil Cooking series with Chef Boy Logro - Spicy Thai Meatballs
SPICY THAI MEAT BALLS
Ingredients
1 tsp freshly ground black pepper
1 tsp coriander root
3 cloves garlic
1 tsp salt
500 g minced lean beef
¼ cup flour
¼ cup BAGUIO oil for frying
2 tbps chopped fresh mint and coriander leaves to garnish
Spicy Sauce
1 ½ to 2 tbsp Thai red curry paste
½ cup thick coconut milk
2 tbsp crunchy peanut butter
1 ½ tbsp fish sauce
1 tbsp sugar
Procedure
1. Blend the pepper, coriander root, garlic and salt in a blender or food processor until fine.
2. Place the beef in a bowl, add the ground paste and mix thoroughly with your hands. Shape bite size small balls. Pour the flour on a plate. Coat the meat balls evenly with flour.
3. Heat the BAGUIO oil in a frying pan and cook the meat balls over moderate heat until brown
on all sides, stirring continuously. Remove the meat balls from pan and drain on paper towels.
4. Make the Spicy Sauce in a separate frying pan. Add 1 tbsp of BAGUIO oil and the curry paste and gently stir fry for 2 min. Add the coconut milk, bring slowly to a boil, then add peanut
butter, fish sauce and sugar. Stir until the ingredients dissolve, then add the meat balls and simmer for 5 min. Put the meat balls in a wide bowl. Sprinkle with coriander leaves or mint.Serve with sliced cucumber if desired.
