Southern Style Pimento Cheese! (Not that kind that sticks together)

Start with:

16 oz. brick of sharp cheddar and a
8 oz. brick of extra sharp white cheddar

Cut into 1/8 inch strips about 1 inch to 1 and 1/2 inch long.
Lightly hand mix the strips in a large bowl and set aside.
Do not include any crumbs from the cutting process.

In a separate bowl put:

1/2 cup cottage cheese (small curd)
1/2 cup softened cream cheese
1/2 cup mayonnaise
1 tbs. of milk or half and half
pinch of garlic powder
pinch of cayenne pepper
pinch of salt
2 to 3 pinches of black pepper
1 tsp. sugar (or more)
1/8 tsp. Worcestershire
Blend with a hand mixer for 2 to 3 minutes until smooth!

Now fold in:

1 tbsp. finely diced sweet onion
1/4 cut diced dill pickles (seeds removed)
1 tbsp. chopped chives (fresh or dry)

Now fold the mixture into the cheese and add a 4 oz. jar of
pimentos (drained) Mix gentle ....

Serve with crackers, on bread, or just as a side dish! Enjoy!
