How to make five-nut moon cake:
(1) five-nuts:
1. Chestnut;
2. Peanuts;
3. Sunflower Seeds;
4. Pumpkin seeds
5. Watermelon seeds

(2) Ingredients:
1. Sesame
2. Honey
3. Tangerine sugar;
4. Wax gourd candies;
5. Cooking oil;
6. Alkaline water;
7. Eggs;

(3) The moon cake skin making process:
1. Appropriate amount of honey and a little cooking oil;
2. Put in alkaline water;
3. Put in an appropriate amount of salt;
4. Put in wheat flour;
5. After kneading the dough, let it wake up for 90 minutes;

(4) The filling process:
1. Raw nuts are roasted;
2. Shred;
3. Stir-fry glutinous rice noodles; (low heat for 5-6 minutes)
4. And stuffing;
5. Honey + osmanthus syrup + oil + sesame oil + sugar
6. Put in the nuts;
7. Mix well;
8. Add sugar and pepper powder;
9. Put in the fried glutinous rice flour;
10. Add water appropriately;
11. Knead into a ball;

(5) Baking process:
1. After the mold is formed, spray a small amount of water on the surface of the moon cake;
2. Take out at 180 degrees Celsius in 5 minutes;
3. Brush a thin layer of egg yolk liquid;
4. Bake at 160 degrees Celsius for 5 minutes;
5. Take out and brush the second egg yolk liquid, which is more than the first time;
6. Bake at 150 degrees Celsius for another 25 minutes;
7. Complete;

(6) Tips:
1. To prevent the moon cake from bursting during the baking process, use a toothpick to make a few small holes on the back of the moon cake;

五仁月饼制作方法:
(1)五仁:(根据爱好,自由选择)
1、板栗;
2、花生;
3、瓜子;
4、南瓜子
5、西瓜子

(2)配料:(根据爱好,自由选择)
1、芝麻
2、蜂蜜
3、糖橘糖;
4、冬瓜糖;
5、食用油;
6、碱水;
7、鸡蛋;

(3)面皮制作过程:
1、蜂蜜适量,添加食用油少许;
2、放入碱水;
3、放入适量盐;
4、放入小麦面粉;
5、面团揉匀后,醒面90分钟;

(4)馅料制作过程:
1、生果仁烤熟;
2、切碎;
3、炒熟糯米粉;(小火5-6分钟)
4、和馅;
5、蜂蜜+桂花糖浆+油+香油+白糖
6、放入果仁;
7、拌匀;
8、放入白糖,添加花椒粉;
9、放入炒好的糯米粉;
10、适当添加水;
11、揉成团;

(5)烘焙过程:
1、模具成型后,在月饼表面喷撒少量水;
2、180摄氏度5分钟取出;
3、刷薄薄一层鸡蛋黄液;
4、160摄氏度再烤5分钟;
5、取出刷第二次蛋黄液,比第一次多点;
6、150摄氏度再烤25分钟;
7、完成;

(6)小技巧:
1、为防止月饼在烤的过程中爆裂,用牙签在月饼背面打几个小孔;
2、在制作过程中,尽量挤出空气;
