Mini cake «PAVLOVA» with lemon curd

Ingredients for meringue:

Egg whites 100 g
Sugar 80 g
Powdered sugar 110 g
Corn starch 5 g

Cooking method:

1. Whip room temperature egg whites to «beer foam», add sugar gradually and continue whipping to dense peaks.
2. Add powdered sugar and whip again.
3. At the end add corn starch and mix.
4. Take a tablespoon and place the meringue on the parchment. Make a well in the middle using a spoon.
5. Bake in a preheated oven at 90°C for about 1-1.5 hours. Use convection mode. I baked one hour to make the middle soft.

Ingredients for curd:

Lemon juice 120 g (3 medium pieces)
Water 20 g
Zest of 1/2 lemon
Egg yolks 2 pieces
Sugar 110 g
Butter 50 g

Cooking method:
1. Squeeze juice from lemons and add water.
2. Grind egg yolks with sugar.
3. Combine two mixtures.
4. Put the mixture on a slow fire and mix constantly, until first bubbles. Use silicone or wooden spatula.
5. Take off the fire. Make it cool within 10 minutes.
6. Add cold butter in pieces and mix.
7. Leave in a refrigerator for one hour.
8. Fill every meringue with curd.
9. Decorate with cream on request.
