心想事成 (新春開運美饌)Sea Cucumber with Oyster

材料 (Ingredients): 海參1磅 (sea cucumber 1 lb),金蠔豉1磅 (oyster 1 lb),露筍10支 (asparagus 10),生薑4片 (ginger 4 slices),青蔥2条 (spring onion 2),檸檬4片 (lemon 4 slices)。

上湯料 (Supreme Broth): 雞腿2個 (chicken thigh 2),火腿4安士 (ham 4 oz),黃豆2安士 (soy bean 2 oz),元肉牛粒 (diced beef),生薑2片 (ginger 2 slices),清水8杯 (water 8 cups)。

調味料 (Seasonings): 蠔油2湯匙 (oyster sauce 2 tbsp),雞粉1湯匙 (chicken soup base 1 tbsp),冰糖1湯匙 (rock sugar 1 tbsp),老抽1湯匙 (dark soy sauce 1 tbsp),白蘭地酒2湯匙 (Brandy 2 tbsp)。

烹制方法 (Directions): 將海參用清水浸泡過夜 (soak sea cucumbers in water overnight),然後換上淸水再煮滾水焗過夜約10小時 (after soaking overnight, replace bowl with clean water and submerge sea cucumbers, bring to boil, then turn off the heat and soak again for 10 hours),海參要煮滾水焗過夜3次 (repeat the boiling and overnight soaking 3 times),再用小刀將海參刮乾淨皮層,開肚皮清洗內臟 (use knife to scrape rough outside layer and clean inside of sea cucumber),金蠔洗乾淨 (wash oyster),切薑4片,青蔥4條,檸檬4片備用 (slice ginger, spring onion, lemon)。 將上湯用料和8杯水煲3小時,剩下3杯上湯,用炸籬隔去湯渣備用 (to make supreme broth, bring to boil and simmer on low heat for 3 hours)。 鑊中燒水4杯 (bring 4 cups water to boil),放入1湯匙油 (add 1 tbsp oil),將露筍灼熟 (cook asparagus),用炸離撈起露筍備用。 放入檸檬片和海參飛水倒起在炸籬上隔去水份,洗乾淨鑊 (cook sea cucumber in water with lemon slices, then remove from wok),倒入生油1湯匙 (add 1 tbsp oil to wok),下生薑,靑蔥爆炒片刻,再下金蠔豉爆炒5分鐘 (stir fry ginger, green onion, oysters 5 min),贊下1湯匙白蘭地酒 (add 1 tbsp Brandy),加入上湯2杯 (add 2 cups supreme broth),將海參倒入鑊里,慢火燒15分鐘 (add sea cucumbers and simmer for 15 min),才下老抽調色 (add dark soy sauce for color),落白蘭地酒 (add Brandy),用生粉打芡 (add corn starch to thicken sauce),加入1湯匙生油 (add 1 tbsp oil),把露筍排放碟上,海參擺放露筍側邊,海參上面放入金蠔,淋上芡汁即成。
