廣州炒冷飯 Guangzhou Fried Rice
材料 (Ingredients):香米1磅 (Jasmine rice 1 lb),蜆肉3安士 (clam meat 3 oz),鹹猪肉2安士 (salted pork 2 oz),臘脹1條 (Chinese sausage 1),冬菇2個 (shiitake mushrooms 2),青豆角3安士 (long bean 3 oz),青葱1條 (spring onion 1 sprig),鷄蛋2隻 (2 eggs)。
調味料 (Seasonings):鹽1/2茶匙 (salt ½ tsp),鷄粉1茶匙 (chicken soup base 1 tsp),生抽1茶匙 (light soy sauce 1 tsp)。
烹制方法 (Directions):猪肉用鹽1茶匙 (add 1 tsp salt to pork),米酒1茶匙醃12小时 (add 1 tsp rice wine; marinade 12 hours),香米洗净用砂锅煮熟留过夜備用 (wash Jasmine rice; cook in clay pot; chill rice in refrigerator overnight) 。用6杯水放入镬中烧滾 (add 6 cups water to boil in wok),把鹹猪肉臘脹冬菇蒸熟 (steam salted pork, sausage, mushrooms),用湯匙打散鷄蛋備用 (beat eggs)。将鹹猪肉,臘脹,冬菇,青豆角切粒 (dice salted pork, sausage, mushrooms, long bean),青葱切花 (cut spring onion)。
起镬落水3杯烧滾 (heat 3 cups water in wok),倒入靑豆角粒飛水捞出 (blanch long bean),再将蜆肉出水隔起炸離上 (cook clam meat and remove with kitchen strainer),挤乾水份,然後下少许麻油,胡椒粉拌匀 (squeeze water out of cooked clam meat, then add sesame oil and white pepper powder to clam meat)。
烧热镬,落油2湯匙 (heat 2 tbsp vegetable oil in wok),倒入鷄蛋,臘腸,猪肉炒致鷄蛋半熟 (add eggs to wok; add sausage and salted pork),放入冷饭炒散饭團 (add overnight rice to wok; break down the rice in wok),然後倒入冬菇,蜆肉,豆角,调味料再炒3分鍾 (add mushrooms, clam meat, long beans, seasonings; stir fry 3 minutes),加入葱花略炒幾下即成 (add spring onions)。
