Prancis terkenal dengan sederet hidangan penutup lezat, salah satunya Crème Brulee. Ternyata untuk membuat makanan ini tidaklah sulit. Di resep kali ini aku kasih 2 cara yang dioven dan disteam. Ada juga tips & trik membuat brulee tanpa torch.

Resep Creme Brulee

Bahan:
700 ml cream
5 kuning telur
100 gr gula
¼ sdt garam
1 sdt vanilla extract

Tambahan:
Gula pasir
500 ml air mendidih

Langkah:
Metode 1 : Oven
Metode 2 : Steam

Oven
1. Panaskan oven 160 derajat
2. Aduk rata kuning telur dengan gula
3. Panaskan cream sampai shimering (mendidih bagian atasnya)
4. Temper campuran kuning telur
5. Masukkan air mendidih ke dasar pan
6. Masukkan adonan ke wadah alumunium
7. Panggang selama 35-45 menit

Steam
1. Masukkan adonan ke wadah alumunium, tutup dengan alumunium foil
2. Steam selama 25-35 menit di api sedang
3. Keluarkan dari panci, diamkan 4-6 jam. (Bisa tahan 4-5 hari dimasukkan ke dalam tupperware atau wadah tertutup dan dimasukkan ke dalam lemari es)
4. Taburkan gula pasir merata di atas creme brulee
5. Panaskan sendok di atas kompor 1-2 menit
6. Oleskan sendok panas di atas creme brulee hingga gula caramelize
7. Sajikan

100% Success No Blow Torch. Addictive Creme Brulee Recipe

France is known with an array of decadent desserts, one of which is Creme Brulee. As it turns out, making this dessert isn't that difficult. In this recipe, I'm giving you two ways to cook it, oven-baked and steamed. There are also some tips & tricks to make Brulee without a torch.

Creme Brulee Recipe

Ingredients:
700 ml cream
5 egg yolks
100 g sugar
1/4 tsp salt
1 tsp vanilla extract

Others:
Sugar
500 ml boiling water

Steps:
Method 1: Oven-baked
Method 2: Steamed

Oven-baked
1. Heat the oven to 160°C.
2. Mix the egg yolk with the sugar.
3. Heat the cream to a simmer (boiling at the edges)
4. Temper the egg yolks.
5. Add boiling water to a baking pan.
6. Pour in the mixture to the aluminum cups.
7. Bake for 35-45 minutes.

Steamed
1. Pour the mixture into the aluminum cups and cover with aluminum foil.
2. Steam for 25-35 minutes on medium heat.
3. Remove from the steamer and let it rest for 4-6 hours. (You can keep the steamed cream inside a Tupperware or an airtight container and store it in the fridge for 4-5 days)
4. Sprinkle sugar evenly on top of the Creme Brulee.
5. Heat a spoon on the stove for 1-2 minutes.
6. Run the hot spoon on top of the Creme Brulee until the sugar is caramelized.
7. Serve.
