Three milk cake - Tres leches cake

Fluffy sponge cake soaked in a milk mixture, covered with whipped cream frosting and filled with peaches in syrup.

INGREDIENTS:
For the sponges:
7 medium Eggs (room temp.)
1 Tsp. Vanilla
Lemon Zest (optional)
210g (1 Cup. + 1 Tbsp.) Sugar
1/2 Tsp. Lemon juice
1/4 Tsp. Salt
140g (1 Cup.) All purpose flour
70g (3/4 Cup.) Corn starch

Milk mixture:
250ml (1 Cup each)
Evaporated milk
Heavy cream
Condensed milk
Whole milk

Frosting:
340g (12 Oz) Cream cheese (room temp.)
150g (3/4 Cup.) Sugar
1 Tsp Vanilla
750ml (3 Cups.) Cold Heavy whipping cream
4 Tsp. Whipped cream stabilizer (optional)
I use the brand "San-Apart". You can substitute with a tablespoon of corn starch.

Fruit:
1 big can of Peaches (800g / 29 Oz.)
You can substitute for other canned fruit or fresh berries of your taste.
