Big. Fat. Chops.

BIG BRINED PORK CHOPS 🐷 RECIPE ⬇️

Ask your grocery store butcher to cut you some thick pork chops. This also works with thinner cuts.

FOR THE BRINE:

Combine over low heat:

2 cups of water

¼ cup of The Usual all-purpose blend (Find at Walmart, Kroger and Publix)

¼ cup of brown sugar

Splash of apple cider vinegar

Ice down, pour in large container or ziplock with chops and place in fridge overnight.

Remove, pat down, season chops with more The Usual, grill indirect until 135°F, then sear over direct heat to form crust.

Chops are ready to pull at 145°F. Rest, slice and eat. We dipped them in our favorite cherry BBQ sauce 😍
