THE METHOD

Fire up your grill.

Season the wings to your heart’s content. Really lay it on there.

On a two-zone grilling setup, cook the wings on the cool side until the skin starts to glisten and crisp up.

Finish the wings over direct heat to quickly build up an even char and crispy skin. Pull and drop into a mixing bowl.

Melt a stick of butter and mix in as much hot sauce as you like, tasting for the right amount of heat.

Pour mixture over hot wings and add the zest of one lemon. Toss and serve immediately!
