Seared Lamb Shanks on the Grill: Another great BBQ recipe brought to you by Napoleon.

Ingredients
Lamb Shanks
2 Tbsp Olive Oil
1 cup Dried Apricots
½ Cup Raisins
2 Medium Onions – Diced
2 Carrots – Diced
2 Ribs Celery – Diced
4 Cloves Garlic – Smashed
1 tsp Salt
1 Tsp Ground Pepper
6 Lamb Shanks
2 Cups Harissa Paste
4 cups Vegetable or chicken stock
Recipe
1) Add all ingredients except Lamb Shanks and harissa paste to a roasting pan
2) Place roasting pan directly on the grill over medium-high heat. Close the lid and allow to saute.
3) Season Lamb Shanks with Salt and pepper
4) Heat Infrared Side Burner. Once hot, sear lamb shanks on all sides. Set aside to let cool to touch.
5) Coat Lamb shanks generously with harissa paste. Add to roasting pan.
6) Pour in 4 cups vegetable or chicken stock. Cover with foil.
7) Allow cooking at 300-350F for 2-2.5 hours. Until the meat pulls away from the bone.
8) Remove from grill. Strain braising liquid and reduce in a pan to thicken the sauce.
9) Serve with jus, pomegranates, yogurt and mint.
