Pumpkin pie
Pumpkin pie
It's the season of pumpkins again. You can do a lot with pumpkin. Pumpkin soup is a hit, but you can also use pumpkin in a quiche or pie. That's what I did.
Ingredients
1/2 butternut squash
1 sheet of puff pastry
1 large pear
3 sprigs of thyme
200 g cheese of your choice
3 organic eggs
200 ml of cream
olive oil
nutmeg
pepper and salt
Instructions
Preheat the oven to 185 °
Peel the butternut and cut into wedges. Place on a baking tray covered with baking paper, drizzle with olive oil and season with salt and pepper.
Place in the oven for 20 minutes or until al dente. Set aside
Beat 3 eggs with the cream and add the leaves of the thyme sprigs, season with nutmeg, pepper and salt.
Peel the pear and cut into fine wedges. Cut the cheese into pieces.
Cover the pie dough with the squash and pear wedges and pieces of cheese. Pour over the egg-cream mixture and place in the oven at 185 ° C for 35 minutes.
