Tacos with chicken (tofu) and guacamole

Ingredients (4p)
1/2 roasted chicken (or tofu)
lettuce (or spinach leaves)
1 tomato
1/2 red bell pepper
1 lime
8 'Taco Shells' Santa Maria*
sour cream
fresh cilantro

For the guacamole
2 avocados
juice of 1/2 lime
2 cloves of garlic
1 small red onion
1 red chili pepper (seedless)
a bunch of fresh cilantro
pepper and salt

Instructions
Preheat the oven to 120°C.
Cut the flesh of the chicken into small pieces.
Remove the seeds of the chili pepper and cut into rings. Keep some rings for the finishing touch. Remove the seeds (and peel) of the tomato and cut into small pieces. Cut the bell peppers into cubes (not in the picture). Chop the cilantro roughly. Cut the lime into slices.
Make the guacamole: peel the avocados, remove the pit and cut into pieces. Mix in the food processor with the chopped chili pepper, the finely sliced red onion, the lime juice, (the olive oil), the garlic and the fresh cilantro. Season with pepper and salt.
Heat the Taco Shells or Tubs for a few minutes in the oven.
Fill the Taco Shells or Tubs with some lettuce (or spinach leaves), guacamole, chunks of chicken (or tofu), tomato and bell pepper and sour cream. Serve with the slices of lime and the coarsely chopped cilantro. Finish with some chili pepper rings and a little bit of pepper.
