Keto - Mashed Cauliflower (Low Carb)

Keto Mashed Cauliflower
Ingredients
3 lb cauliflower
3-4 strips bacon
2.5 tb butter
2.5 heavy cream
Green onions or chives
3 medium garlic cloves
2 tb fresh parsley
Sea Salt
Pepper
Inversion blender or regular hand blender.
Crockpot
Crockpot on low with 1/2 c water.(or using stove, steam until tender to soft)
Add washed cauliflower florets, sprinkle salt and cook on low 1-1.5 hrs or until soft but not over cooked or brown.
Fry up 3 bacon strips, chop small, set aside.
Blend cooked florets with cream, butter, finely chopped or pressed garlic, salt & pepper to taste. Add bacon & parsley. Stir.
