發財大利湯(髮菜豬脷豬手蠔豉蓮藕湯) Lotus Root Dried Oysters with Pig Tongue and Knuckle and Black Moss #賀年菜

我今日煲個發財大利湯,中國人過年呢最講意頭,好多時都會煲呢個湯, 髮菜十克,新鮮豬脷一條700克, 新鮮豬手一隻1.3公斤, 咁肉枱就已經幫我燒咗毛, 蓮藕一公斤, 蠔豉100克, 一片薑十克, 呢個湯除咗寓意發財好市,橫財就手,咁仲有呢係佳偶天成嘅意思嘅,長輩呢希望啲後生呢可以快啲結婚,所以煲蓮藕湯呢希望佢哋佳偶天成。豬脷豬手略為沖洗, 滾咗之後出水5至10分鐘,再洗淨, 咁呢條豬脷呢有啲白色嘅膜呢咁呢啲其實係脷苔嚟㗎,咁樣刮咗佢, 咁呢個豬天梯啦咁佢有牙啲牙呢要剝咗佢, 係豬嘅牙齒。蠔豉浸水五分鐘洗乾淨,髮菜浸水半個鐘, 畀少少油落去洗下啲髮菜, 蓮藕有啲人會刨皮有啲人唔刨皮,咁睇你自己做開個做法啦,切開呢睇下裏面呢啲有冇污糟有冇泥,如果有泥呢就再切開佢洗乾淨。 我呢度呢就5公升水, 咁煮滾咗之後呢我哋就擺嗰啲豬肉落去啦, 蠔豉啦, 擺埋薑, 蓮藕啦, 呢個湯都幾多㗎,咁可以夠六七個人飲㗎喇, 滾咗轉去中小火,煲佢大約個半鐘左右,咁期間要留意一下個水份,咁另外我哋差唔多得嘅時候先至落髮菜。 煲咗去一個鐘頭四個字,咁落埋啲髮菜先,有啲油 咁我撇一撇佢先, 跟住落埋啲髮菜,煲多十分鐘, 咁已經煲咗個半鐘,可以落適量嘅鹽就可以上得碟,等我試一試味先, 咁呢條豬脷切左佢 咁就可以上埋碟。

black moss 10g, fresh pig tongue 700g, fresh pig knuckle 1.3kg, the butcher has burnt out the hair on it, lotus root 1kg, dried oyster 100g, ginger slice 10g, the soup, besides, has the homonymic mean of getting rich, prosperous fortune, lucky and easy money,and an ideal couple formation,the elderlies wish the young ones to have marry very soon, to prepare this soup to wish they will be a good couple.
rinse the pig tongue and knuckle thoroughly,the tongue and knuckle blanch for 5 to 10 mins, rinse again, scratch any dirts, there is a white membrane on the tongue, the tongue coating, it has to scratch away, remove any teeth, broken bones sticked on the mandibles, pig's teeth. dried oysters soaked in water for 5 mins and wash thoroughly, black moss soak for 30 mins, add a little bit of oil to rinse the black moss. lotus root is peeled off, someone does not prefer the peeling off, after the cutting, check if mud is still sticking in the holes, cut into parts further to rinse again.
I use 5 litres of water, after water is boiled, add in the pig tongue and knuckle,soaked dried oyster, add in the ginger slice,add in the lotus root, this soup is well enough for 6 ~7 persons serving, turn into middle low heat cooking for around 90 mins, keep an eye on the water level, the black moss will be added at around 10 mins before the soup is ready. the soup has cooked for 80 mins, time to add in the black moss to the soup, there is some floating oil on the surface, let me remove it, put in the black moss, continue to cook for another 10 mins. the soup has cooked for 90 mins, add moderate amount of salt, let me taste it, the pig tongue will be sliced to serve.
