Coconut Mochi Cake

Coconut mochi cake has an amazingly chewy texture and rich coconut flavor. If you like eating boba, or Korean rice cakes, this dessert is for you. You don't need any fancy tools or mixers, just two bowls, a whisk, and your ingredients. This is the *only* cake that I make that uses the super easy muffin method (wet + dry ingredients, then dump into pan), because it really tastes that good. Add some freshly toasted coconut flakes on top, and you're good to go. 🍡
