One pan recipe l 1 serving Japchae
This recipe is perfect to make a small portion of japchae. Just add the ingredients step by step and season the ingredients separately. You’ll be surprised that how easily japchae can be made!

Ingredients
100g dangmyeon (japchae noodles)
1/2 medium onion
2 shiitake mushrooms
70g spinach
50g beef, sirloin or round
50g carrot
Seasoning for onion and carrot
1/4 teaspoon salt
Seasoning for shiitake mushroom and beef
1 tablespoon soy sauce
1/2 teaspoon brown sugar
1/2 teaspoon minced garlic
1/6 teaspoon ground black pepper
Sauce the noodles
2 tablespoons soy sauce
1 teaspoon dark brown sugar
3 tablespoons water
1 tablespoon sesame oil
Instructions
1. Soak the noodles and the mushrooms in lukewarm water for 20 minutes.
2. Thinly slice the onion. Finely julienne the carrot. Cut the spinach into 2-inch size lengths. Mince the garlic. Thinly slice the beef.
3. Drain the mushroom and squeeze out the excess. Take the stems out and then thinly slice.
4. Heat the large pan over medium heat. Add cooking oil to the pan. Place the onion and the carrot in the hot pan and stir fry for about one minute. Season with salt.
5. Make a room in the pan to cook the beef and the mushrooms. Add the beef to the pan and pour the soy sauce over the meat. Put the minced garlic and dark brown sugar and quickly stir fry. Add some ground black pepper.
6. Add soaked noodles to the pan. Add the soy sauce and the sugar and give them a nice toss. Stir fry until the noodles turn clear, or cooked.
7. Place the spinach and cook until they wilt. Add 2 to 3 tablespoons of water if it’s too dry at this point.
8. Turn off the heat and drizzle the sesame oil. Add some salt if needed.
