Gyeran Guk l Super Soft Egg Soup

This egg soup can be made in less than 15 minutes, with very few ingredients. There are two tips that make this soup super delicious. Add the egg mixture after turning off the heat, and do not stir until the eggs harden.

Ingredients
2 eggs
30g Korean chives or green onion
3~4 button mushrooms
2 cups unseasoned vegetable broth or chicken broth
1 tablespoon soup(light) soy sauce
1/3 kosher salt
1 teaspoon sesame oil
1/4 teaspoon ground black pepper

Instructions
1. Crack the eggs and pass them through the sieve. Add salt and mix.
2. Clean the mushrooms and slice them. Chop the chive.
3. Add the broth to the small pot. Add sliced mushrooms to the pot. Season it with soup soy sauce, and salt. Bring it to a boil.
4. Turn off the heat when it gets to a boil. Slowly add the egg to the broth. Add chopped chives and ground black pepper and sesame oil. Do not stir the soup, until the eggs harden.
5. Serve warm with rice.
