How to Ball Up Pizza Dough

This is my method for balling up pizza dough - in this case it's my no-knead Neapolitan pizza dough, but this method will work across all styles of pizza making.

My methods might not get A-grade scores from Italian pizzaioli, but that's not the point - I'm trying to bring you easy methods that work, to help you progress quicker and shortcut your route to quality pizza at home.

As with everything in dough making, balling up is a learned skill and something you will need to practice - so don't worry if you you find it difficult to start with.

In the video I talk a lot about surface tension, which is important for a few reasons. Firstly, and most importantly, getting tension in your dough continues to develop the gluten structure, giving your dough strength. Secondly, a taught surface gives your doughball structural integrity, meaning it will hold itself together as it proves. Finally, developing a nice taught surface on your dough will make it less sticky and much easier to handle.
