說到在受歡迎的港式街頭小吃中
咖哩魚蛋定是其中之一
隨後演變到咖哩三寶
用到的食材可以有
豬皮、 蘿蔔外、水魷魚、墨丸、牛柏葉、牛肚都可以是當中的寶
可根據個人喜好而選

一般咖喱三寶是用魚蛋、豬皮和蘿蔔一起
但處理豬皮比較麻煩
所以我們這次用水魷魚來代替

咖哩魚蛋中的魚蛋
在台灣好像有點難找到好吃的
暫時只在超市買到比較接近的來吃
主材料：
魚蛋 一盒12粒
白蘿蔔 1個
水魷魚 1件

配料：
蒜頭2粒
紅蔥頭3粒

醬料：
咖喱粉 5湯匙
沙茶醬 1湯匙
豆瓣醬 1湯匙
紹興酒 少許
水 500ml Water （蘿蔔水）
蠔油 1湯匙
生抽 1湯匙
鹽 半茶匙
1茶匙生粉＋水（打芡用）

做法：
1. 先把水魷魚切細。
2. 白蘿蔔刨去外皮和中層的皮，切件。
3. 待水煮沸，把水魷魚和魚蛋放進水裡，煮去腥味和油，汆水後盛起沖水備用。
4. 水滾放入蘿蔔，汆水2分鐘
5. 再煮清水下2茶匙糖，放入蘿蔔煮10分鐘，除去苦澀味。（蘿蔔水留用）
5. 把紅蔥頭、蒜頭切碎。
6. 小火起鍋裡加入油，把紅蔥頭和蒜頭炒香。
7. 加入咖哩粉，沙茶醬，小火再炒香，後加酒少許。
8. 加入蘿蔔及蘿蔔水煮5分鐘。
9. 加入和魚蛋。
10. 加蠔油、鹽、生抽。(如喜歡辣味重一點可加豆瓣醬 ）
11. 以中火煮5分鐘。
12. 生粉打芡，盛起。

Pork skin, radish, water squid, cuttlefish balls, and tripe can all be the treasures
You can choose according to personal preference

Generally, Curry Sambo is made with fish balls, pork skin and radish.
But it’s more troublesome to deal with pigskin
So this time we use squid instead

It seems a little hard to find delicious fish balls in Taiwan
Still now, I only buy similar ones at the supermarket.
