Whole Wheat Mega Omega Bread

A word about whole wheat flours: Not all flours are created equal, and the same goes for whole wheat flours. I have used two different, though closely related kinds. One from white wheat and the other from red wheat. The white wheat is finely ground and is easy to substitute for bread or all-purpose flour. However, the red wheat, which you may find as a stone-ground wheat, is stronger and coarser, requiring a little more water (about 2 oz (60 ml)) and yeast (double what the recipe calls for). The result is a heartier, denser loaf. So, make sure you know your whole wheat flour.
Ingredients (in order)

2 cups room temperature water (note: for coarse stone ground whole wheat, add an extra 1/4 cup of water)
1 1/4 tsp salt
1/2 tsp instant yeast (1 tsp for coarse stone ground whole wheat flour)
1 Tbsp chia seeds
1 Tbsp hemp seeds
1 Tbsp flax seeds
1 Tbsp sesame seeds
2 Tbsp sunflower seeds
1 Tbsp orange zest (lemon zest works well, also)
2 Tbsp maple syrup
1 Tbsp extra virgin olive oil

3 1/2 cups whole wheat flour
3/4 cups rolled oats, toasted and divided (1/2 for the recipe; 1/4 to roll and coat)
