A Tale of Two Salsas

One batch, two salsas. One, fermented for three days then refrigerated; the other, straight to the fridge. Each with their own unique flavor profiles worthy of praise and enjoyment, both absolutely delicious in their own rights. The fermented salsa, tangy, spicy and fizzy; the refrigerated salsa, sweet and spicy, tangy and sour.

Ingredients (in order used):
1 medium-large onion
8 cloves garlic
1 medium green bell pepper (or 2 green Changyang peppers)
1/2 medium-large orange or yellow bell pepper
1/2 medium-large red bell pepper
1 whole red Korean chili pepper
1 whole jalapeño pepper
1 large lime
1 1/2 kg cherry tomatoes
1 1/2 Tbsp sea salt, more for taste
1 Tbsp ground black pepper, more for taste
1 tsp ground cumin, more for taste
