Ooni Koda 16 | Part One: Mushroom Magic 🍄 | 90 Second Bake Time | Process and Recipe

Hands down one of my new favourite pizzas, absolutely insane and well worth the extra time to make the mushroom sauce 🍄 (unless you don’t like mushrooms of course).

Mushroom Sauce Recipe:
25g dried porcini mushrooms
1 onion
1kg button mushrooms
50g unsalted butter
Half tea spoon of chill flakes
75g plain flour
2 chicken, vegetable or mushroom stock cubes
100ml single cream
50-60g cheddar

Part Two: Mushroom Magic Pizza Sauce

Dough Recipe | 65% Hydration with 2 .5% salt:
Caputo 00 Flour OR Strong White bread Flour 450g
Salt 11g
Water 290ml
Yeast 1g
Based on a 24hr proof time at approx 12 degrees celsius (the time/temperature has a surprisingly large impact on yeast required so worth paying attention to these). This makes 3no 250g dough balls. Check out PizzApp for quantity guide.
