Creamy White Bean Chicken Chili Recipe
Ingredients:
3 cans of Northern beans, rinsed and drained
½ stick butter
2 large white onions, diced
⅓ cup all purpose flour ( you can use gluten free, too:)
4 cups chicken broth
3 cups half and half
3-4 chicken breasts that have been seasoned with a generous amount of salt and olive oil and roasted in a 400 degree oven for about 20-25 minutes…until no longer pink inside
1 tbsp chili powder
1 tbsp ground cumin
2 tsps salt
Freshly cracked black pepper or ½ tsp of ground black or white pepper

Toppings: grated pepper jack cheese (or your favorite!) fresh cilantro, sour cream…tomatillo or green chili salsa would be delicious too!

Melt butter and a little bit of olive oil over medium heat ( adding the oil helps prevent the butter from burning). Add onions and saute for about 15 minutes or until tender. Add flour and stir for 5 minutes (do not brown). Gradually whisk in chicken broth and half and half. SImmer gently until thickened, about ten minutes. Add your beans, chicken, chili powder, cumin, salt and pepper. Simmer gently to blend flavors, about 20 minutes. Add toppings and you’re ready to serve!

Green Chili Cornbread Recipe
Ingredients:
1 small can (4 oz) green chilies
1 15 oz can of cream style corn
1 cup yellow cornmeal
1 cup flour
1/2 cup sugar
2 tsp baking powder
1 tsp baking soda
1 tsp salt
1 cup sour cream
2 large eggs ( I used three of our small eggs)
1/4 cup melted butter cooled.

Preheat oven to 400 degrees. Whisk cornmeal and next 5 ingredients in a bowl. Whisk sour cream, eggs and butter in another bowl to blend. Add egg mixture to the dry ingredients. Mix in chilies and creamed corn.Bake in greased muffin tin for about 20 minutes or until a toothpick comes out clean:)
