Coconut Pandan Steamed Layer Cake - Banh Da Lon
These instructions below are simplified for convenience. All the details are in the video. Please watch the entire video and take notes for a guaranteed successful recipe. It will answer many questions you might have.
Ingredients
Coconut cream - 800 ml
Tapioca flour - 400 gr
Sugar - 430 gr
Water - 250 ml
Salt - 4 gr
Rice flour - 60 gr
Mung bean - 150 gr
Pandan extract- 2-3 drops
For the mung bean batter
Sugar - 30 gr
Water - 30 ml
Yellow food coloring- 1-2 drop
1. Rinse mung beans several times. Soak in water overnight or at least for several hours. Steam. Add to a food processor. Blend until it becomes a powder. Set aside until ready to add to batter.
2. Add coconut cream, water, sugar, salt to a large bowl. Mix well.
3. Now add rice flour, tapioca flour, and mix until combined.
4. Run it through a sieve.
5. Divide into three portions. See the video for the amount of each.
6. Add pandan extract to one portion
7. Add mung bean power to another and blend it in a blender until smooth like a smoothie. Run it through a sieve. To it add water and sugar.
8. The last portion of the batter is white, coconut flavor.
Steam on high heat. 7-9 minutes for the first layer. Add one additional minute to each new layer, for example, if the first layer was 9 minutes then second layer is 10, the third layer is 11, etc. The timing might be different depending on how thick or thin your layer is and how many layers you are making.
Let it cool completely before removing from the baking pan.
Serve cold.
