Dhiren Kanwar, chef, entrepreneur, and gastronomical nomad, takes a page of his own book as he delves deep into the culinary realm. He talks about his inhibitions, aspirations, and how the world is changing vis-à-vis their palettes. He gives an insider's view on what goes behind the closed kitchen doors and the food industry rolls (pun intended !)

An entrepreneurial manager with 27 years of experience in the F&B industry. He has worked with brands like ITC hotel, Taj hotels, Mcdonalds, Domino’s Pizza, Dunkin Donuts, Subway, Barista, Café Coffee Day and Inox to contribute to their market entry strategy. In the past, as an entrepreneur, he has founded and successfully exited a venture and later was in investment advisory as Head of F&B strategy with Future Capital, now Everstone Capital. As President of the All India Ingredient Manufacturers association, he has led several delegations to represent the industry with the India government and contributes in policy making for food regulatory affairs. Currently, with Puratos NV, Belgium, the 2nd largest manufacturer of Bakery ingredients worldwide, to set up their operations in India and South Asia with full P&L responsibility. His forte in building strong relationships across large customers adds a dimension to the swift establishment of entities
