STEAKHOUSE WEDGE SALAD! RETRO RECIPE!!

Let's use some of that delicious peppercorn blue cheese dressing we made in our previous video and fix up a classic and retro wedge salad! This is a great way to add to your barbecue dinners. Setting out wedges of crisp iceberg lettuce and topping with either classic blue cheese or thousand island dressing then sprinkling with some delicious toppings you are going to have a salad fit for a king or queen! These are surprisingly delicious and so easy to make! So take a trip back and fix yourself a wedge salad!

The Wedge salad has a bit of an unknown history. The first "recipe" for this type of meal accompaniment was printed in a cookbook from 1916 and was included in a book that focused on preparing for buffets and large crowds. This make sense since wedge salads are perfect for such an occasion! They are easy to prepare in advance of service and stay crisp while on the buffet. The Wedge salad really gained popularity in the 50s and 60s and was a popular offering at many high end restaurants and public events.

My wedge starts off with a crisp head of iceberg lettuce. When selecting one from the produce section you want to look for heads that are compact and heavy for their size. This means they will be super fresh. If you give the lettuce a squeeze with your whole hand and it gives a lot, then it should be foregone. Choose one that feels solid and dense and heavy.

You will want to remove the core of the lettuce by removing the dirty outer leaves then finding the stem or core end then holding in in both hands and forcefully rapping on the counter or worktop. The core should easily come out for you.

Now cut your head into four equal wedges. Today I am making two wedge salads for you, similar to the versions you would find in retro eateries. Place the wedges on plates and get busy building!

One of the main differences of a wedge salad in comparrison to a tossed salad is that you put the dressing on first then add the toppings. As opposed to a tossed salad where you throw everything together then dress. I love this more constructed version that requires a knife and fork to enjoy. I think you will too.

I topped my wedges with our creamy peppercorn blue cheese dressing and one with my classic thousand island dressing. These are two salad dressings that would be offered in a retro diner for your consideration. Next goes some grape or cherry tomatoes that have been halved and I like a bit of diced cucumber. Some places also add sliced avocado on the side as well as half of a hard cooked egg. Every wedge salad has bacon. Lots of crispy crumbled bacon. This adds just the perfect salty, smoky edge that rounds out the crisp freshness of this salad.
