How do you feel about pickled foods? (I’m still mad there’s no pickle emoji in 2024!)
I am OBSESSED with them. I’ll try just about anything that’s fermented, and occasionally, I like to make my own pickled goods at home (like these pickled red onions).
But pickled foods aren’t just delicious, they also have some incredible health benefits.
Whether you love them or are yet to be convinced, there’s something about that tangy twist that keeps me coming back for more.
Did you know that fermented foods can help improve digestion and boost your immune system?
The fermentation process creates #probiotics, which are beneficial bacteria that support a healthy gut. Think foods like yogurt, kefir, kombucha, pickles, miso, kimchi, tempeh, sourdough bread and many more.
These good bacteria can help with digestion and the absorption of nutrients.
Making my favorite pickled red onions is easy too:
1 red onion
5-6 cloves of garlic.
1 tablespoon kosher salt
1 tablespoon peppercorns
1 cup of vinegar (I went for ACV)
And add water until it covers the top.
Let it chill in the fridge for a little bit. When the liquid turns dark purple, and the onions are a light pink, they’re ready to enjoy— this takes a few days, but is so worth it!
