What's for Dinner? Trying another new recipe - Mexican Pulled Pork
Cooking at home and trying another new recipe that we’ve never tried UNTIL NOW! Join us as we make Mexican Pulled Pork!

Ingredients:
2 tbsp chili powder
1 tbsp salt flake
1 tbsp brown sugar
1 tbsp ground cumin
½ tsp cayenne
½ tsp turmeric
½ tsp ground oregano
½ tsp onion powder
½ tsp garlic powder
½ tsp cinnamon
2 tbsp of vegetable oil
1 medium onion, sliced
3 lbs boneless pork shoulder, rind and fat removed
14 oz can of chopped tomatoes
1 cup water
2 tbsp apple cider vinegar
Salt and freshly ground pepper to taste
6” Flour tortillas, guacamole, sour cream and salad, to serve
Directions:
Mix all ingredients together EXCEPT pork, oil, tomatoes, water and vinegar together in a bowl until blended. Rub the pork with the spice mix ensuring to cover all the pork.
In my Slow Cooker / Pressure Cooker: Pour oil into cooking pot and Set temp to HIGH and Brown/Saute pork until browned on each side. Add onion and continue to brown for 2 minutes. Add tomatoes, water and vinegar to the pork. Press Start/Stop. Secure the Lid, Press Meat/Stew and set pressure to HIGH. Adjust cook time to 2 hours and make sure Steam release valve is closed.
Once cooking is complete and pressure is released, shred pork with two forks. Season to taste with salt and pepper. Serve in tacos with toppings.
MY DEVIATIONS: Like I’ve mentioned in my other recipe videos, I don’t always use the exact ingredients or follow the exact directions. Instead of the list of individual seasoning ingredients listed, I used my old trusty: One package of 25% less sodium Ole El Paso Taco Seasoning and some garlic salt. I didn’t use the vinegar so I used a little more water (or you could use chicken broth). NOTE the sauce was super thin and you could thicken in up with flour, but we didn’t try that. I may next time or strain it out. With tacos it was super messy with all the juice BUT IT WAS DELICIOUS
