補充說明:1. 鳳梨切丁,不打成泥狀,也不用刨絲,不但較方便,而且做出來的纖維口感剛剛好。2. 市售糯米粉易有一股霉味,好糯米粉難尋,故這裡用麥芽糖或水麥芽來取代糯米粉,以幫助鳳梨餡成形。3. 酥皮部分若添加杏仁粉,則較易太過乾硬而失去道地的又酥又軟的口感。4. 酥皮添加中筋麵粉是爲了能更好塑型,若全用低筋麵粉會太鬆軟易碎。
