From Garden to Table Homemade BOK CHOY KIMCHI | Alternative to your traditional Kimchi

From garden to table homemade Bok Choy Kimchi. Freshly picked bok choy from my mini balcony garden to make a quick and easy kimchi salad.
INGREDIENTS:

- 4 to 5 baby bok choy
- 2 teaspoons salt
- 2 1/2 tablespoons gochugaru ( korean red chili powder )
- 2 tablespoonbs fish sauce, adjust as needed
- 2 teaspoons honey or sugar
- 1 teaspoon sesame oil
- 2 teaspoons garlic, minced
- 1/2 teaspoon ginger, grated
- 1 medium onion, thinly sliced
- 1 medium carrots, julienned
- toasted sesame seeds ( optional )

NOTES:
This is not like regular kimchi so it won't keep in the feridge for too long. I recommend finishing it within 2 days, but it is best when sereved right away.
