Crackling Christmas Roast Pork Belly Roll 2019

2kg pork belly skin on
Cut slits in the skin about 1 finger width

3 tbsp 5 spice powder
2 tsp pepper
2 tsp salt
3 tbsp Chinese cooking wine

Rub the spice paste on the inside meat. Avoid the skin
Don't forget to save some for the skin off pork belly

Tie the whole roll with kitchen twine
Rub salt on the skin to remove moisture
Place in the fridge uncovered overnight

Bake at 200C for 90 minutes

Further crank up the heat to 250C for 30 minutes

Remove the twine when the pork has rested

Cool for 1 hour before cutting to avoid losing moisture and the meat drying out
