Makes - 2 Large Servings or 4 Medium Servings

200g - Pasta of your choice (I used Fettuccine)
1 - Brown Onion, Diced
4 - Garlic Cloves, Thinly Sliced
200g - Portobello Mushrooms
1/4 Cup - Flat Leaf Parsley, Chopped
1/4 Cup - Oregano, Roughly Chopped
1/4 Cup - Basil, Thinly Sliced
8 - Chicken Tenderloins, Cut in Thirds
1 Cup - Baby Spinach
2 Tbs - Ghee (Clarified Butter)
1 Tbs - Olive Oil
3/4 Cup - Parmesan Cheese, Grated
3/4 Cup - Sun-dried Tomatoes, Cut into Strips
1 Tbs - Sun-dried Tomato Oil
600ml - Heavy Cream
Seasoning to Taste
