【楊桃美食網】京都排骨 Kyoto Pork Chops

材料:排骨600克、熟白芝麻 少許

Ingredients:
pork chops 600g, baked white sesame seeds (small amount)

調味料A.鹽1/4茶匙、細糖1茶匙、料酒1大匙、蛋白1大匙、小蘇打1/8茶匙
B.低筋麵粉1大匙、太白粉1大匙、沙拉油2大匙
C. A1醬1大匙、梅林辣醬油1大匙、白醋1大匙、蕃茄醬2大匙、糖4大匙
D.太白粉水 1茶匙、香油 1大匙

Seasoning
A. Salt 1/4 teaspoon, powdered sugar 1 teaspoon, cooking rice wine 1 tablespoon, egg white 1 tablespoon, baking soda 1/8 teaspoon
B. Cake flour 1 tablespoon, corn starch 1 tablespoon, cooking oil 2 tablespoon
C. A1 Steak Sauce 1 tablespoon, Worcestershire sauce 1 tablespoon, white vinegar 1 tablespoon, tomato ketchup 2 tablespoons, sugar 4 tablespoons
D. Corn starch 1 teaspoon, sesame oil 1 tablespoon

做法:
1.排骨剁小塊,用調未料A.小蘇打、鹽、糖拌勻加入蛋白、米酒抓勻後加入麵粉及太白粉拌勻再加入沙拉油(加可不加)略拌備用。
2.熱鍋下沙拉油燒至約100度,將排骨下鍋小火炸約4分鐘後起鍋瀝乾油。
3.另熱鍋下調味料C.A1醬、梅林辣醬油、蕃茄醬、糖略煮下排骨迅速翻炒加入香油拌勻,灑上少許白芝麻即可。

Preparation Method:
1. Cut the pork chops into small pieces, mix evenly with seasoning A, baking soda, salt, sugar then add in the egg white and rice wine. Mix together evenly then add the cooking oil (optional), mix and set aside.
2. Heat the oil in the pan until 100°C, add the pork chop pieces into the oil and fry on low heat for around 4 minutes, then remove from the pot and drain the oil.
3. Heat another pan and add seasoning C, A1 Steak Sauce, Worcestershire sauce, tomato ketchup, and sugar. Cook the mixture quickly then add the pork chops, cook and stir quickly and mix in the sesame oil, then sprinkle on the white sesame seeds.
